MUTTON CURRY

Today is the first of Syawal (muslim calender) where by all  muslims all over the world celebrate eid after one month of fasting.In Malaysia the  children will be given money in an envelope that we call 'duit raya'.
As for this year each of my children got $190 from their aunties and uncles .
Today recipe is mutton curry that I cooked during Eid .


INGREDIENT

3 kilo mutton
10 onions (fried)
3 sp garlic paste
3 sp ginger paste
3 sp chilli  paste
6 sp coriander powder
2 sp curry powder
1 sp black pepper powder
2 ' cinnamon
6 cloves
6 cardamon
3 stalk curry leaves
3 black cardamon
6 tomatoes

METHOD
heat oil in pressure cooker and fry  the curry leaves,cinnamon,cloves and the ginger and garlic paste. Add in the coriander,curry,chilli and black pepper powder and fry for about 20 min or until oil separated.
Add in the mutton and fried onion and tomatoes and close the lid. let it cook for 30 min.(depending on the size of the mutton pieces) .
Once done garnish with coriander leaves.

A TRIP TO PERHENTIAN ISLAND

During recent school holiday my family and I went on a nice vacation to Perhentian island .
It is located in the east coast of Malaysia . The journey from Taiping  took a good 5 hours .
The breathtaking scenery is spectacular.
.


This nice bread pudding is so easy to make and loves by my children

BREAD PUDDING

6 slice bread (cut in 2 triangle)- deep fry in oil
600 ml milk
6 tbsp sugar( according to your taste , I like it super sweet)
2 cardamon


METHOD

In a pan ,boil the milk and stir in sugar, put in the cardamon.
once boiled put in the fried bread and put off the fire . Let the bread soak up the milk.
Keep in the fridge until  time to eat .


This delicious chicken curry is nice serve with puri.

CHICKEN CURRY

1 onion slice
4 garlic pounded
1" ginger pounder
1 tomato cubed
2 potatoes skinned and quartered
1 cup coconut milk
1" cinnamon stick
3 cloves
2 cardamons
3 tbsp curry powder
1/2 chicken cut into bite size

METHOD

Heat up 4 tbsp oil in a pan put in  the cardamon,cloves,cinnamon,put in onion and fry until brown and put in garlic and ginger paste.
Now put in the curry powder and fry until fragrant. Mix in Chicken and potatoes.Once the potatoes soft put in tomatoes and coconut milk . Cook until chicken is done (it will take about 1/2 hour).

ROTI PURI

 INGREDIENT

600 g flour
1-2 cups water(depend till you get the right consistency)
1 tbsp ghee
3 tbsp margarine
pinch of salt
oil for deep fry

METHOD

Mix the flour ,ghee and margarine until it assemble bread crumb.
Stir the salt and water and pour in slowly bit by bit.
knead the dough well until it soft and not sticky.
Heat the oil in a wok . While waiting for the oil to heat up ,break off pingpong
ball size pieces,sprinkle dry flour on the table and roll out the dough into thin rounds.
Fry the puri until it puffs up and turn over and remove when it is browned and
repeat with the other pieces.
